Vegan Cashew Cheese, Arugula, Tomato, and Pine Nuts
Ingredients
1 Recipe Infallible Pizza Dough Crust
1 Recipe Bohemian Miso Cashew Cheese
1 Ripe Tomato, sliced 1/4"
6-8 oz. Baby Arugula, washed
1/4 Cup Pine Nuts, toasted
1 tbsp Olive Oil
Lemon Zest
S & P, to taste
1. Spread edges of pre-baked crust lightly with olive oil, and sprinkle with salt.
2. Spread cashew cheese over crust until it leaves a 1" border untouched.
3. Lay tomato slices evenly around crust.
4. Toss baby arugula lightly in olive oil, and spread evenly on crust.
5. Sprinkle pine nuts evenly over arugla.
6. Bake at 400 degrees for 10 minutes, or until crust is cooked to your liking
7. Top with lemon zest and more black pepper.
