A Tofu Scramble that actually Takes the Taste!
Ingredients
1 Block Organic Firm Tofu, pressed and diced (I love Trader Joe 's Sprouted Tofu...but use both blocks if you use it!)
8 oz. Baby Bella Mushrooms, chopped
1 Medium Orange Bell Pepper
1/2 Medium Yellow Onion
4-5 cloves Garlic, minced
1/4 Cup Oregano
2 tsp. Hickory Smoked Paprika
1 tbsp. Black Salt
1/2 Cup Soy Sauce or Tamari
Black Pepper to taste
1. Sautee garlic and onion with the oil of your choice over medium heat.
2. Increase heat to medium-high and add the tofu, oregano, and black salt. Stir frequently, cooking until tofu begins to brown.
3. Add soy sauce, mushrooms and bell pepper. Cook just until mushrooms are soft.
4. Finish with paprika and black pepper.

A note about the ingredients: I used Hickory Smoked Paprika because I enjoy the spice, and it's what's in my house. The variety that you use will not drastically change the flavor. HOWEVER, Black Salt is crucial to flavor profile of this dish. It has an "eggy-ness" and pairs well with the soy and oregano.
